Carrot Cake...Yum!


Lately I have been in the mood to cook! This is a good thing. One of my goals for the year is to become a better cook. I have been trying new recipes, and really have been enjoying my time in the kitchen. A few weeks ago I tried a new carrot cake recipe. I have never made a homemade carrot cake before this. This recipe is really easy, and ohh, so good.

Best Carrot Cake
4 eggs beaten
2 c. sugar
1 1/2 c. oil
3 c. packed grated carrots
2 tsp. soda
2 tsp. cinnamon
1/2 tsp. salt
2 1/4 c. flour
1 c. chopped pecans if desired
Add oil to eggs; add sugar and beat until fluffy. Add carrots and blend. Sift flour with spices; mix into batter. Bake in a 9x13-inch greased, and floured pan at
350 for 40-45 minutes

Cream cheese frosting:
8 oz. cream cheese
2 T. orange juice concentrate
3 c. powdered sugar
1 T. orange rind
Mix until the right consistency to spread. Spread on cooled cake, and refrigerate.

Sounds yummy! I will have to try this. I've never made carrot cake before either.
I am trying new recipes all the time. This morning I made whole wheat crepes that were really good for being whole wheat. I love crepes, but wanted something healthier...
I get mostly all my recipes from allrecipes.com You can rate/review the recipe so you know how good they are since they've been tried and tested! I love it.

I have been saying I want to be a better cook ever since I got married.....12 yeas ago!!! Maybe someday. Anyway, I can't believe Ashley is your cousin! I'll have to ask her about that. She is my SIL! She is married to my husbands brother! Small world. We really do need to get together. Sorry, I kinda dropped off the face of the earth there for a while!

I've still been thinking about that ice cream sandwich recipe as well...even better in the summer because NO cooking is really involved.

I'm a huge carrot cake fan, but Jim gags at the mention of it. So sad. I made for my grandma one last year that had ginger in it & was topped with candied carrots (Martha Stewart, of course). Jim wasn't there so I went all out & dang it was good!

im a pretty good cook i have to admit..my girls always say on bday or mothers day card-mom your the best cooker EVER! too cute!

Yes, Homemade Carrot Cake is one of my very favorites. I love homemade cinnamon rolls too!

I think it's so great you're working on becoming a better cook!

I'm always trying to perfect my Bread Making Skills. I have a Half Whole Wheat/Half White Bread Recipe that tastes very good if you're interested I'll email it to you.
